Quick Haitian Rum Cake Recipe

History of Cake in the Caribbean: The Caribbean region boasts a rich culinary heritage, shaped by the diverse cultures and influences that have converged upon its shores throughout history. When it comes to desserts, one delectable treat that has become a beloved staple across many Caribbean islands is the Caribbean Cake. Introduced by European settlers, this delightful confection reflects the fusion of traditional Caribbean ingredients and techniques with European baking traditions. Each island has its own unique take on the cake, and in Haiti, it is a symbol of celebration and joy, often served during special occasions and gatherings. Today, let's embark on a culinary journey to create an authentic Haitian Cake that encapsulates the flavors and spirit of the Caribbean.

Haitian Cake Recipe:

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Zest from 1 lime
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/4 cup of evaporated milk
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon of almond extract
  • 1/2 cup finely chopped raisins
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup dark rum (optional, for an authentic Haitian touch)

For the Glaze:

  • 1/2 cup confectioners' sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

  2. Sift Dry Ingredients: In a medium bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, cloves, and salt. Set aside.

  3. Cream the Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy using an electric mixer.

  4. Add Eggs and Vanilla: Beat in the eggs, one at a time, into the butter-sugar mixture. Add the vanilla extract and mix well until fully incorporated.

  5. Fold in Dry Ingredients: Gradually add the sifted dry ingredients to the batter, mixing just until everything is combined. Avoid overmixing to keep the cake tender. Add evaporated milk

  6. Add Raisins and Nuts: Stir in the chopped raisins and pecans or walnuts into the cake batter, distributing them evenly.

  7. Bake the Cake: Pour the cake batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Prepare the Glaze: While the cake is baking, prepare the glaze. In a small bowl, mix the confectioners' sugar, milk, and vanilla extract until smooth and creamy.

  9. Glaze the Cake: Once the cake is baked, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Drizzle the glaze over the cooled cake.

  10. Serve and Enjoy: Slice the Haitian Cake and serve it with your favorite beverage. Share this delightful taste of the Caribbean with friends and family during special occasions or simply as a delicious treat anytime!

Note: The Haitian Cake can be stored in an airtight container at room temperature for a few days or refrigerated for longer freshness.
